The d-value of a bacterial culture heated to 100°c is the time it takes to kill 90% of the population.

D-value or decimal reduction dose is a term used in microbiology and it refers to decimal reduction time. It can be defined as the time (or dose) required at a given condition (e.g. temperature), to kill 90% of the exposed bacteria.
